Amish~Pickled Beets





One of my favorite things to do is visit my Amish neighbors. I love to eat at the Mennonite Buffet in Jamesport, Missouri. It has the yummiest food.  I so love their pickled beets.

 I searched my Grandmother's recipe box I found this recipe. I felt like I struck gold.( I was paying $8.oo for a quart.) I love this recipe. I just know you will too!

2 cups sugar
3-1/2 c. white vinegar
1-1/2 c. water
1 t. salt
1 T. cinnamon
1 T. allspice
4 16 oz. cans small whole beets drained
4 1-pint canning jars and lids

Combine sugar, vinegar, water, salt, and spices in a large kettle; bring to a boil over medium heat. Add beets. Reduce heat and simmer for 15 minutes; cool. Pack into hot jars; cover with liquid. Store in the refrigerator up to 3 weeks.

Mmmmm, I love pickled beets. :-)

I wonder how that recipe would work with fresh beets?

I will be going to Jamesport tomorrow and visiting the H and M Bulk Store. This is an outing for our United Methodist Women group and a friend of mine. Loads of FUN, FOOD, AND FELLOWSHIP. Really appreciate your blog. I started canning at the age of 8, my hands were little so I was the official jar washer. My husband raises a large garden and the whole family gathers to put in jars or freeze whatever is ready. Healthy food is a labor of love.

If you canned these, I wonder how long you would process them...sounds good. May have to experiment. One day I hope to get to Jamesport. Have never been but have been told it is only 61 miles from my house. Any places you recommend??

I read your post to my husband Thursday night, and told him I wanted to go to Jamesport sometime since it is only 60 miles. He didn't say much, then at bedtime told me to get some sleep because he was taking me in the morning. Loved it and will be going back. Very similar to the ones I used to frequent in Indiana and in Windsor MO, but much closer.
