We love salsa at our home. I made a huge bowl of it and put in pint jars each week~
I will can some this summer but this is second best!
I can make a huge bowl for just pennies.
My kids eat this with tortilla chips as a snack.
2 cans of stewed tomatoes~coarsely chopped
1/2 onion ~chopped
3-4 jalapenos~chopped fine
salt and garlic to taste
2-3 radishes
fresh cilantro


We are such salsa fans. I can hardly wait for our summer garden harvest so I can can up a bunch. This sounds and looks like a yummy version to try until then.

ReplyDeleteI just recently found your blog, and I am LOVING it! I've been playing "catch-up" by reading some of your older posts. I love to make salsa, and I read your canning recipe and your home-made version. Both sound yummy!
Here are a couple of tips that work for me: when canning the salsa, if you cut the tomatoes in half crosswise, like you would to juice a lemon, then squeeze them gently, you can remove most of the seeds and watery juice. Just take a finger or edge of a knife, and wipe off the insides. This will make for a thicker salsa, and you can probably use less thickening.
For quick home-made salsa, I cheat by using petite diced tomatoes, and strain the juice off, either just with the top of the jar, or letting it sit in a strainer for a bit. You'll have a consistency more close to fresh-cut tomatoes, as compared to using stewed tomatoes.
I guess we like our salsa a bit more on the "chunky" side!
