Grandma Catron's Pickled Beets~ Amish Style



If you have visited an Amish home or Restaurant~ you know that Pickled Beets are on most tables. I just love them. I would buy them from my Amish neighbors for about $8.00 a quart. I found this recipe in my Grandma's recipes. It is so good! Hope you enjoy!

Grandma Catron's Pickled Beets~
2 cups sugar
3-1/2 c. white vinegar
1-1/2 c. water
1 t. salt
1 T. cinnamon
1 T. allspice
4 16 oz. cans small whole beets drained
4 1-pint canning jars and lids

Combine sugar, vinegar, water, salt, and spices in a large kettle; bring to a boil over medium heat. Add beets. Reduce heat and simmer for 15 minutes; cool. Pack into hot jars; cover with liquid. Store in the refrigerator up to 3 weeks.

I love them too, but I'm all alone on this one...cleaning out/using pantry items feels great! I'm forever trying to work on planning meals and using things I have on hand.

My daughter got out the pickled beets tonight. I think she ate the jar herself. We have also been using everything from the pantry. I love the fact that I can make a meal from "scratch". We even raise our own meat birds. I also like to barter. I traded 3doz eggs for a 50lb bag of potatoes. I used some and I will try and can half the bag so I don't have to worry about them going to waste.

Oh, the pickled beets look wonderful. I love them. My mom and grandmother would can beets that were grown in the garden. I helped my mom make them once and they were wonderful. Thanks for the memory.

We love pickled beets at our house. I have quite a collection of vintage pickle dishes and try to use them often...and pickled beets always have to be included. Oh, and I won a fair ribbon for my beets one year :)

This post made me smile. My mom used to make these, and everyone in the family loved them, everyone except me. I'm not sure why, as I loved most things with a bit of cinnamon flavor. They sound pretty good now :-)
