Lemon Meringue Pie





Pie Filling~
1 1/2 cups of sugar
1/2 cup cornstarch
1/8 teaspoon salt
4 egg yolks
1 3/4 cups of water
1/2 cup fresh lemon juice
3 Tablespoons of butter
1 teaspoon grated lemon rind
1 baked pie crust






  • Combine first three ingredients in a large heavy saucepan; set aside



  • Combine egg yolks, water and juice: stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute, stirring constantly. Remove from heat, stir in lemon rind and butter. Spoon into pastry shell.

  • Spread Meringue over the top of hot filling~sealing the edge of the pastry. 


  • Bake at 325 degrees for 25-28 minutes.

Meringue Recipe~

3 egg whites
6 tablespoon sugar
1/2 teaspoon vanilla

Beat egg whites until they are frothy; gradually add sugar and continue to beat until stiff peaks form. Add vanilla and place on top of pie fulling.

I am for sure~ we are having a restful much needed summer. This school year was so heavy but we seem to be getting back to a new normal.
Hope you are enjoying your summer as well. We have Heart and Home next Monday night~ Pizza and Pop Night. Hope you can make it!

Hi Carrie,
I just giggled when I read this post! I, TOO, have NEVER made one! They are in my top 5 favs of pies! But I'm always intimidated by MERINGUE! So, that being said.....you have given me confidence to give it a try! HA! I didn't even know you BAKE the pie with the meringue! My grandma was such a pie maker and she just "Did It" by memory! I remember sitting on the counter watching her. When she passed away, I wanted her "pinch salt" bowl which she would just reach in and grab pinches of salt to add to everything. She never measured anything! So that is a special goodie I have by my stove.
Hoping you are loving your summer HOT HOT days! We are just burning up here south of you. We need our pools! Let's keep working on our hubbys! HA!

OH HOW I LOVE lemon pie...wish I was there to enjoy it too. It looks delicious...you did an awesome job.

I've been craving "anything" lemon these days...not sure why. So I made a lemon pie...and lemon tarts...and this morning purchased a lemon, cocnut bread from Cobs Bakery....so delicious.
