Oh So Good And Healthy ~ Fagioli Soup


This is really good as a meatless dish but the men in my house would never eat it if I left the meat out.
Enjoy~

1 pound of ground turkey
2 cans tomato sauce
4 cups ~ cooked pasta
2 cartons 32. oz beef broth
3 cups of water
1 can of kidney beans
1 cup chopped carrots
1 cup chopped celery
1 T. dried parsley
1/2 T. basil
3 cloves garlic
1 T. olive oil

* Saute carrots, celery, garlic until soft and tender.
* Boil pasta and set aside.
* Combine broth, water, and tomato sauce with carrots, celery, and garlic in a large stock pot.
 * Add parsley, basil, pasta and beans and simmer for 10 minutes.

Just a beautiful time of year for soups. Will try this for sure. My whole family loves soups...especially on Sunday afternoon when we have returned from church and it's going to be a quiet day of rest.
