Very Moist Banana Nut Bread~

  • My Hannah made this recipe tonight and it was so good~thought we would share!
  • It is made with oil instead of shortening~which I like!

  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 1/4 cups flour
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla
  • 1 1/3 teaspoons baking soda
  • 1/4 cup buttermilk (I used sour milk)
  • 1 cup chopped walnuts
  • 4-5 bananas (use completely black bananas, this is very important)

    Heat oven to 350°. Grease or spray 2 loaf pans.

    In a large bowl, mash bananas with a masher or by well washed hands.

    Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.

    Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.

My Church Windows~

Our Farming On Faith journey began about three years ago when we broke ground to build our new home in the country. I have been walking with God a long time~God and I have been around the block together a few times. I thought I had a lot of faith. When you think you have faith~you probably don't. God took our family on an amazing journey of faith. Our faith was indeed really small. God taught us some valuable lessons while we were building our home~some lessons we would have never learned any other way. God is so good. Our little Farming On Faith was built~with God's help along the way.

I wanted some church windows to hang on our huge vaulted wall in our living room. The theme of my decorating reflects our family and our faith. My Brian worked long and hard on these windows. I had Florentine Glass put in them~glass used for church windows. I left it clear with the idea I would paint some color on the back if I so desired. I change my mind so often I want to be able to change colors. For now~I am loving them just as they are.

Celebrate National Pancake Day~

My children love pancakes. In my quest to make all things from my Pantry~ I started making my own Pancake Mix. I just thought National Pancake Day would be a great day to share this recipe. We love it! I make it in a big container and I post the recipe on an index card taped to the container. It saves money but also keeps my pantry stocked! Give it a try. Enjoy!

Homemade Pancake Mix

12 c. flour
4 c. dry powered milk
3/4 c. baking powder
3/4 c. sugar
2 T. salt

When you are ready to make pancakes~use the following recipe.
1 1/2 c. dry mix
1 c. water
1 egg, beaten
2 T. oil

* I write the recipe on the outside of my container. The dry mix can be stored in the pantry.
This makes wonderful pancakes and waffles.

So Long Winter~

This is what I see when I look out my window this morning. We have 9 inches of snow and it is now about 15 degrees~on a bright note the sun is shining. PLL

Today is the first day of Spring Home-school Classes. I teach our K4~K5 students and we are to do a Unit Study~on none other than Spring. Well I am confused with record low temps and snow everywhere you look~I surely think my young students will be confused. So in light of our record snow and cold temps at this late February date~I have decided to switch gears. Menopause seems to be making that a daily event for me lately! But that is for another post. No~today I get to be young again. We are going to have a~ "Farewell To Winter Celebration." We are making the cutest snowmen with great big mittens that say, "Goodbye Winter." We are going to play pass the ice~like hot potato. I have songs, finger plays and stories all about winter~leaving and coming back some other day! We are going to learn just where all our furry and slimy friends go when it snows and snows and snows!!!! We are going to sing Frosty and we are going to eat Sno-Ball Hostess cupcakes. ( my favorite) All just because we can. In saying~"goodbye" to Winter~ I am hoping and praying Winter will say~ "goodbye" to us!

I'm Dreaming Of A Spring Garden...............

I am dreaming of a Spring garden..........................
I have been searching my seed catalog and checking it twice............

After being in Branson for a Married Couple's Retreat with 55 degree~sunny weather we have returned home to none other than more SNOW!!! It snowed 3-4 inches Friday while we were romancing in Branson. Then on our way home last night we ran into every kind of winter weather you can imagine~ice, freezing rain, drizzle and snow. We have about 6 inches more today. It is still snowing and we are to get more this evening. The Farmer's Almanac has sure been accurate this winter! I think I am convinced I will use the ol' Farmer's advice for planting my garden this Spring. Oh~Spring! I keep thinking surely it is around the corner. This is the worst winter that I can remember in years and years.

We had a wonderful time away. We stayed at the Chateau At The Lake in Branson.
The Retreat had over 350 couples from the surrounding five states.

I will share more about the retreat as I post through the week. Next year it will be February 18th and 19th also. If you live close you would really enjoy it!

For now we are shoveling and shoveling and shoveling and cleaning the chicken coop.

Let me answer the question several of you have asked about why I clean the chicken coop~ let me explain. Each day I gather 12 wonderful farm fresh eggs that we eat, share, and sell. If you have a wonderful clean coop ~your eggs are nice and clean. If you have a messy coop your eggs are not so clean~as in I don't want to eat them~ messy! Besides the fact I just love my girls and want them to be happy and well. The happier they are the better they lay. Chickens need to stay dry to stay well. The only way to keep the coop dry is to keep it clean and keep the shavings or straw dry.

As I was cleaning the coop today Sami came down to chat with me. After her sickness she has been my little shadow and has developed such a friendly disposition. She is such fun. When I talk to her she just talks back in her little language! She is the cutest little bird~I think I should write a book about her.

Poor Chickens ~they just hate the snow. Their feet are not made to stand in the snow. They hold one foot up under their body at a time~to keep it warm. I will just keep them locked in their coop for the day with all the snowing and blowing. They are ready for Spring too!

Do You Know Who Roger Bacon Was?

As a Scientist in the Middle Ages, way ahead of his time, born in the in the 1200' s ~Roger Bacon predicted the use of cars, airplanes, motorized boats, and possibly submarines. He is credited for developing the ideas of reflection (where we we be without our mirrors?~I can't image) and refraction. ( the splitting of light such as in a rainbow or a reflection from a prism on the wall~beautiful!)
This English man is credited for creating the magnifying glass from which came the concept of spectacles or as we know them today as eyeglasses. Many of his writings are considered to be masterpieces.
As my son~Caleb and I studied this man today~ I find this statement of his most interesting~he was indeed a brilliant man.
Roger Bacon ~the English Scientist of the Middle Ages wrote, " Science will never be able to save man from his sins."
Dispite all the technology of our times~I would have to agree!

Driving Miss Daisy~

Have you seen the movie~Driving Miss Daisy? It is the cutest movie!

Today is my day to drive Miss Daisy. Every Friday I feel like I get to be in this movie. ~

A friend~of a friend~ called me about a year ago and asked me if I wanted a little part time job. I like to have a little pocket change so I decided I would go meet Miss Billie.

When I got there, Miss Billie was sure I could start right away and she would need me to be there everyday. Well as a stay at home Mom, who home- schools, I just had to turn her down on her offer. It happened to be at the end of the school year so I told her I would help her out three days a week through the summer. She really needed some help~so I committed to just the summer. She would continue to look for someone to replace me before August ~time to start back to school. Something happened during that summer.

Let me describe Miss Billie to you. She is beautiful, tall with the straightest posture, she is 84 years young, she knows everything a History book could every tell you, she can recite anything you would want to hear~ she is brilliant. She is organized and has the sharpest mind! She can garden and knows most everything on the subject. She feeds the birds for the entire city~no really. The birds know her address by heart. Her squirrels are the most obese squirrels I have ever seen. Miss Billie even buys food for the raccoons. She does have an enemy~the neighbors cat that roams free. The cat has been labeled a serial killer and Billie is on the look out for the cat at all times. She also wants everything her way and her way alone. We had a few go arounds and meetings of the mind~ if you know what I mean. She won!! She wins every time! She is the most incredible lady~I enjoy spending time with her.

What happened? ~ I fell in love with Miss Billie.

By the end of the summer she had not found anyone that would conform to her and only her way of thinking. By this time I ~ I hated the thought of just anyone helping Miss Billie so I hired my MOM. Wasn't that a good idea? My mother drives Miss Billie Monday through Thursday and I go every Friday afternoon to drive Miss Billie. It has become a time I look forward to each week. She makes me lunch and we visit. I have learned the most amazing things from Miss Billie. I have also learned that life goes by so quickly and that we need to stop and cherish each and every day while we are here on earth. I am so glad God brought Miss Billie into my life.

God has blessed my life richly by giving me a friend named~ Miss Billie. It is my desire that I know for sure Miss Billie has accepted Christ as her Saviour. Would you pray with me?

Valentine Fruit Platter~

As you may have noticed I am planning our Valentine Lunch~ it is on Sunday this year so our celebration will be right after Sunday Morning Church Services. It seems appropriate considering God is the Author of Love. What an amazing God who has blessed me with all that I love in my life.

As I was planning I found this tutorial on how to prepare a heart fruit plate~which would go wonderfully with all my low cal fruit dips below. The tutorial is HERE!

Caramel Fondue With Fresh Fruit~Weight Watcher Recipe

Caramel fondue with fresh fruit


6 oz Weight Watchers by Whitman's Caramel Medallions
1/4 cup(s) fat-free skim milk
1 cup(s) strawberries, hulled
1 medium banana(s), cut into chunks
1 large apple(s), halved and thickly sliced


  • Fill a medium pot halfway with water. Cover pot with a medium metal bowl that fits snuggly over pot, ensuring that bowl’s bottom is not submerged in water. Bring water to a boil over medium-high heat.

  • Add caramels and milk to bowl, stirring to ensure even melting. When caramels are halfway melted, reduce heat to medium and continue stirring. When milk is fully incorporated and caramels are melted, fondue is done. Serve fondue with fruit. Yields about 2 1/2 tablespoons dip and 1/2 cup fruit per serving.
