Homemade Easy Blueberry Muffins~

These are so very good!

1/4 cup butter
2 eggs
1/2 tsp. salt
1 c. sugar
2 c. flour
2 tsp. baking powder
1 tsp. vanilla
One-half cup milk
2 c. fresh or frozen blueberries

Preheat oven to 350° F.

Grease and floor muffin pan.

Beat together butter, eggs, salt, and sugar.
Mix flour with baking powder and sift into first mixture, alternating with milk.
Blend in vanilla.
Add blueberries.
Pour into muffin pan and bake for 25 minutes.

I love blueberries and often make blueberry muffins - I always use fresh because this is a blueberry growing area and during the growing season you can buy them for a fraction of the frozen packets. I use coconut oil instead of butter but I love the idea of those sweet little pots Carrie - they really do look like flowerpots which I have seen used for little rosemary breads in one of my cook books.
