It's Good To Remember ~





Not long ago I was going through my photos to bring some order to them. While putting away Caleb's pictures that I used for his graduation ~I came upon a picture of my sister and I and a couple of friends. I sent the picture in a text to each to my girlfriends of my youth. (Well we can still be girls in our middle 40's and pushing~ right?) Not one of us was overly excited about the picture. Did we ever look silly in our 80's fashion? Yet ~ I enjoyed remembering those days. I have forgotten them and moved on to other things.

Time has a way of moving us along. We forget the events and people that have been important to us in the past. Time passes and yesterday fades. We really can't help it because life has a way of ushering in busyness and things that demand our attention. Like having babies and raising them and growing into a family~ a very busy and hectic family.

When this happens sometimes it may be easy to forget just where God has brought us from and all the times He has brought us through the happy days~ the sad days and every day in between.

When the trials in life come and we are feeling alone or afraid. It's good to remember. In looking back we can renew strength by remembering that He can be trusted in the present and in our future just as He could be trusted in our past. Can you give me a hallelujah ?

I think maybe the day King David sit down to pin this verse just maybe he was having a morning just like I am having this morning. I am in the middle of one of those times in my life where I really need to remember these verses.  How about you?

Make Your Own Jalapeño Jelly~ Super Easy!




If you are like me ~ you have peppers galore! This is a great jelly to can now and use for Christmas parties and or gift baskets. It is SO easy! I am about to whip up another batch or two.



Jalapeno Jelly~

2 green pepper ( You need 4 cups of peppers total)
1 red pepper
6-8 Jalapeno peppers
7 cups of sugar
1 1.2 c. vinegar
1  box~ Sure Jell





*Seed the peppers and grid them in the blender with vinegar.
* Boil pepper/ vinegar mixture in a pot and add sugar; boil for 15 minutes.
* Add Sure Jell and bring to a full boil.
* Stir for 2 minutes.

Makes 6 jelly size containers.

Pour over cream cheese and serve with crackers.

For Canning~





Remove from heat and skim any foam.  Ladle hot jelly into hot sterile half-pint jelly jars, leaving a 1/4" head space. Wipe rims clean of any spillage. Top each jar with seal and band. Tighten to fingertip tight. Place filled jars into water bath canner and bring to a full rolling boil. Allow to process for 15 minutes after it comes to a boil. Once time has elapsed, remove from canner and allow to cool. Listen for the "ping" sound to ensure that jars have sealed properly. Jelly will be liquid in consistency until it cools completely and sets up.

The Easiest Way To Remove Skins From Tomatoes~





This is the easiest way to get the skins off tomatoes~ I promise.
Begin by spraying a cookie  sheet with olive oil.
Prepare tomatoes by coring them and cutting out all bad spots.
Place them stem side down on the pan.
Roast in the oven on 400 degrees for 20 minutes. 
Let them cool and them remove skins~ they pull right off.
This is not as messy as blanching them. 
Your tomatoes are now ready for your favorite salsa or marinara sauce.

How To Can Homemade Salsa~ YUMMY!


It is easier than you think!

About 36 medium tomatoes ~ (blanched and peeled and chopped)
4 green peppers ~ diced
2 onions chopped and seeded (Leave some seeds if you want heat.)
2 cloves garlic diced
10 ~ or to taste jalapeno peppers
1 1/2 cups white vinegar
1/4 teaspoon brown sugar
2 Tablespoons of Salt
1 can of tomato paste



Mix all these ingredients together and cook over medium heat.

Ladle into serialized canning jars. Make sure you wash the rims and outside of the top of the jar so that it is good and clean. (This is very important!)  Place sterilized lids and rims onto the jars.

Place into a boiling canning pot of water and boil for 25 minute. Make sure the jars are covered.

Take out of water and  turn upside down on the counter and do not disturb for 24 hours.
Any jars that did not seal use up within a week.

These will keep up to one year. Once they are opened use within one week.

Homemade Spaghetti Sauce~





1/2 cup chopped onion
3 cloves chopped garlic
4 cans diced tomatoes (Or cooked fresh tomatoes that have been blanched and cubed)
1 can tomato soup
3 Tbs olive oil
1/4 tsp. basil
1/4 tsp. oregano
1/4 rosemary
2 whole bay leaves
pinch of fennel seeds


* Tip~
 Add salt and  brown sugar to taste if you wish. I like a little sweet and salty!


Saute onions in oil until slightly transparent~ then add garlic and brown just a bit. Add the tomatoes and all spices. Bring to a boil and then reduce to a simmer for about one hour.  Finally add the soup if you feel it needs to be thickened ~ you can omit if you feel it is fine without it.
