Italian Bean Soup~ A No Meat Recipe




     This recipe is meatless but you will never miss it~ I  promise. 
It will not only save on the grocery budget but it is so good for your heart health.


    Soak a package of beans~ you can use Navy or Cannellini beans~ over night. If you don't have overnight you can put your beans in a pot and bring them to boil. Turn off the heat ~ cover the pot and let them sit for about four hours. After the beans have soaked fill your pan full of water and cook the beans. I add a little salt. Watch that the water does not boil down. Keep the beans covered with water until they are tender.


One package of beans (cooked and drained)
2 cartons of organic beef broth
2 carrots (diced)
2 stalks of  celery (diced)
1 can organic tomatoes 
1 onion (diced)
3 cloves of garlic
1 cup chopped spinach
 parsley (to your taste)
basil (to your taste)
a pinch or two of crushed red pepper
 2 T. olive oil
sea salt
pepper

1. Saute the onions, garlic, onion celery and carrots until tender.

2. Add the cartons of beef broth, tomatoes, and all the seasonings to the above ingredients.

3. Add the beans to the above ingredients.

4. Add spinach and simmer for about 15 minutes.
