Haystack Bird's Nest Candy Recipe

Haystack Bird Nests

12 ounces white chocolate chips
1 cup slivered almonds
1 cup shredded coconut, sweetened
Food coloring, optional

  • Melt the white chocolate in a double boiler. When melted, add food coloring of your choice. 
  • Stir in the almonds and coconut, coating well. Place a heaping tablespoon of the mixture onto a baking sheet that has been lined with wax paper, forming the mixture into the shape of a bird nest. 
  • Refrigerate until fully hardened. Fill the nests with jelly beans or candy of your choice. 

Grandma Jean's Pickled Beets Recipe

If you have visited an Amish home or Restaurant~ you know that Pickled Beets are on most tables. I just love them. I would buy them from my Amish neighbors for about $8.00 a quart. I found this recipe in my Grandma's recipes. It is so good! Hope you enjoy!

2 cups sugar
3-1/2 c. white vinegar
1-1/2 c. water
1 t. salt
1 T. cinnamon
1 T. all spice
4 16 oz. cans small whole beets, drained
4 1-pint canning jars and lids

Combine sugar, vinegar, water, salt, and spices in a large kettle; bring to a boil over medium heat. Add beets. Reduce heat and simmer for 15 minutes; cool. Pack into hot jars; cover with liquid. Store in the refrigerator up to 3 weeks.

Chicken Salsa~

1 bag of 4 pound chicken breast ~ frozen
1 can Mexican style tomatoes or 2 cups homemade Rotel
2 cans of beans or 4 cups cooked beans
1 package of Taco Seasoning
1 cup salsa

Pour all in ingredients in the crock pot and cook on low for about 6 hours or until chicken just shreds and fall apart.

Serve on flour tortillas, taco shells or make nachos with Chicken Salsa.

Homemade Peach Pie ~ Made With Canned Peaches

2 cups of canned peaches
1 cup of sugar
2 tablespoons cornstarch
1/8 teaspoon nutmeg
1/8 stick of butter

* Drain the juice from peaches and place in a saucepan. 

* Mix sugar, cornstarch and nutmeg together and then stir into peach juice. Now add butter and  cook on low~ stirring constantly until thickened.

*Place peaches into prepared pie crust. Pour thickened juice over the top.

* Place top pie crust on top and bake 20 minutes or until golden brown on 350 degrees.
