Roasted Salmon With Roasted Potatoes and Broccoli~ This Is Amazing!

Looking for a heart healthy meal to kick off the New Year? Here is a keeper.
 You just have to put this on the menu for this week. YUMMY!

1 large head of broccoli (cut in small florets)
1 lb Yukon gold potatoes (cut in 1/8 inch thick slices)
1 large red onion (cut in small wedges)
3 Tbs olive oil
Kosher salt and pepper
4 salmon fillets
1/4 cup of mayonnaise
1 Tbs fresh lemon juice
1/2 small clove of garlic ( pressed through a press)

  • Heat oven to 450 degrees. 
  • Toss together broccoli, potatoes, onion with olive oil , salt and pepper and spread them on a baking sheet. Roast for 15 minutes.
  • Season salmon with salt and pepper and place them on baking sheet and roast for 10 more minutes.
  • Mix mayonnaise, lemon juice and garlic ~ serve with the salmon.
