Easter Carrot Cake

Grandma Mary's Carrot Cake Recipe
2 cups of flour
2 cups of sugar
2 cups grated carrots
4 eggs
1 cup mashed canned carrots or carrot baby food
2 teaspoons soda
1 1/2 teaspoons of  cinnamon
1 teaspoon salt
1 1/2 cup of oil
1 cup chopped nuts (pecans) optional

1. Mix sugar and oil.
2. Add eggs one at a time.
3. Sift dry ingredients into a separate bowel.
4. Add dry mix to the wet mix.
5.  Stir in carrots and nuts.

Bake at 350 degrees for 60 minutes or until toothpick comes out clean.

Cream Cheese Frosting~
Package of Cream Cheese
7 oz. powdered sugar
1 stick of butter
2 Tablespoon milk

Mix together~ ( I needed more powdered sugar than 7 oz. Mix according to the texture you like)
